Forgot to move meat from the freezer overnight and need it thawed immediately? You can bring a frozen cut to ready-to-cook condition in about five minutes using three common kitchen ingredients: salt, white vinegar and room-temperature water.

Gather: about eight cups (around 2.5 liters) of water at room temperature, 200–300 ml of white vinegar and one level tablespoon of salt. Place the frozen piece of meat inside an intact plastic bag and seal it tightly before proceeding.

Step-by-step quick thaw

  • Pour the water into a deep bowl or container.
  • Add 200–300 ml white vinegar and stir.
  • Mix in one level tablespoon of salt until dissolved.
  • Immerse the sealed bag with the frozen meat in the solution, weight it down so it stays submerged.
  • Leave it for five minutes, then remove — the meat should be thawed and ready for cooking.

The practical appeal of this method is speed: what used to take at least an hour and repeated changes of warm water can be shortened to minutes with this simple mixture.

Why it works: white vinegar helps accelerate thawing because of its chemical properties and a lower freezing point, which enables the frozen piece to give way faster under physical conditions. As an added bonus, the acetic acids in vinegar can enhance flavour and tenderise the meat slightly. For better taste results with poultry, substitute apple cider vinegar for white vinegar — it pairs particularly well with chicken.
