Noma to Reopen Its Doors Next Week Under New Leadership
Rene Redzepi withdrew from day-to-day management, Pablo Soto is the new executive head chef; Noma moves to a monthly menu and will work on improving team conditions.

The world-renowned restaurant Noma in Copenhagen will open its doors to guests next week, which will be the first opening under new day-to-day leadership since co-founder and head chef Rene Redzepi stepped back following accusations of physical and psychological mistreatment of employees.
Redzepi, originally from Tetovo, publicly apologized to all affected for the period while he was at the head of the kitchen. The statement says that he will not participate in daily operational decisions, but will retain creative influence over the project.
Changes to the menu and the way of working
Pablo Soto, who has worked at the restaurant for nearly a decade, has been appointed executive head chef. Soto says that Noma will preserve its distinctive identity, but will introduce significant changes to its operations.
One of the most visible changes will be the shift from the previous three seasonal menus to dynamically changing the menu on a monthly basis. This decision is part of preparations for the new work rhythm and guest experience.
Management emphasizes that going forward there will be a stronger focus on improving the living and working conditions of the team, as a direct response to the allegations that led to a review of the leadership structures. These measures will be a priority in the renewal of service.
