Ingredients and method

Use basic pantry items and fresh apples: the recipe is straightforward and requires minimal preparation time.

  • 3 to 4 medium apples
  • 150 g sugar
  • 2 eggs
  • 150 ml oil
  • 200 g flour
  • 1 packet baking powder
  • 1 teaspoon cinnamon
  • a pinch of salt
  • Optional: a handful of walnuts or raisins

Peel and core the apples, then cut them into thin slices or small cubes and toss them with a little cinnamon to release aroma. In a large bowl, beat the eggs with the sugar until the mixture becomes foamy; add the oil and mix. In another bowl combine flour, baking powder, salt and cinnamon, then fold the dry mixture into the wet one. Gently fold the apples (and walnuts or raisins if using) into the batter just until combined. Pour the batter into a greased and lightly floured baking pan and bake in a preheated oven at 180°C for about 35 to 40 minutes, or until a skewer inserted in the center comes out dry.

The key to a moist cake is a light, airy batter and minimal stirring after the apples are added: beat the eggs well so the base traps air, and add the fruit at the end, folding carefully. Also, avoid peeling the apples too thickly — the skin adds extra aroma and texture.

Serve slightly warm or at room temperature. For variation, dust the top with powdered sugar, add a scoop of vanilla ice cream, or fold in chopped nuts or dried fruit before baking.
