Moussaka with stale bread: use yesterday’s loaf to feed the family
A bread-based moussaka with 400 g minced meat, mushrooms and cheese, baked at 200°C and ready in about 45–50 minutes.

Moussaka made with stale bread is an easy, family-friendly alternative to the potato version: slices of yesterday’s loaf are soaked with 50 ml of milk, layered in a greased oven dish and topped with a hearty meat-and-mushroom filling. The dish uses 400 g minced meat, 300 g champignon mushrooms, 2 eggs and 200 ml cooking cream, finished with 200 g grated cheese.
How to assemble the bread-based moussaka
Ingredients (exact amounts):
- 3–4 slices stale bread
- 400 g minced meat
- 50 ml milk (for the bread)
- 2 eggs
- 300 g champignons
- 1 spring onion
- 200 ml cooking cream
- 200 g cheese
- salt, pepper and dry seasoning (to taste)
Preparation: Tear or roughly break the stale bread into smaller pieces, pour over 50 ml milk just to soften, then squeeze the excess by hand and spread the bread across the bottom of a greased ovenproof pan. Sauté the chopped spring onion briefly in a little oil, add the minced meat and sliced champignons and cook until the meat changes color and any excess mushroom liquid evaporates, about ten minutes.
Remove the pan from the heat and mix into the meat two egg yolks and 100 ml (half) of the cooking cream; season with salt, pepper and dry seasoning to your taste. Spread this filling evenly over the milk-soaked bread. Bake in an oven preheated to 200°C for about 30 minutes.
After the first baking, pour over the remaining 100 ml cooking cream and add the whipped egg whites, then scatter the grated cheese on top. Return to the oven for another ~15 minutes, until the cheese melts and forms an appetizing golden crust.
Variations: if you prefer not to use mushrooms, replace them with grated zucchini or carrot, or add finely chopped peppers. Besides stale bread, the base can be made from stale savory rolls or even leftover boiled pasta. This flexibility makes the recipe ideal for using bits and pieces from the fridge.
